From my RV kitchen
Vicksburg, MS surprised me! Rich in Civil War history I was prepared to tour the vast battlefield, learn about the 46 day siege, and explore the lesser known sites such as Grant's Canal but the town itself held such an appeal we extended our stay. I also didn't realize Vicksburg was so close to the southern portion of the Natchez Trace - what a treat!
This special place inspired me to share with you a recipe that has been in my RV for years and years - spinach and mushroom quiche. We'll make that on this RV Cooking Show video as well as a quick and delicious pasta salad...fit for any special occasion brunch.
Ingredients
Quiche:
3 eggs
1 box of frozen spinach - thawed in fridge (on a plate!)
1 can sliced mushrooms - drained
1 T hot sauce (Frank's Red Hot/Louisiana Hot Sauce work well) in a 1/2 c measuring cup +
milk filled to the top of the measuring cup (a scant 1/2 c)
salt and pepper
1 1/2 - 2 c swiss cheese - grated
2T flour
9" deep dish frozen pie crust
Pasta Salad:
8 oz pasta cooked - any shape you desire
assortment of chopped vegetables - your choice - consider artichoke hearts, black olives, onion, zucchini, carrots, grape tomatoes, broccoli
1/2 c Italian dressing - or more to taste
cubed meats and cheeses if desired
How-to
Quiche:
Preheat oven to 400 degrees.
Squeeze all moisture out of spinach. In large bowl beat eggs. Add spinach, mushrooms, milk/hot sauce combo, and salt and pepper - stir well to combine.
In small bowl combine cheese and flour - toss to coat cheese. Add to egg mixture.
Pour mixture into frozen pie crust. Place on a cookie sheet and bake 20-25 minutes until firm and center is slightly puffy.
Pasta Salad:
In large bowl add veggies to cooked, cooled pasta. Stir and add dressing. Stir to coat all ingredients. Salt and pepper to taste.
Additional Tips
Spinach and mushrooms not your thing? Substitute with broccoli, cheddar, bacon, ham - and on and on. This quiche recipe is easy to make your own!
Serve with yogurt and seasonal fruit for any special occasion brunch and enjoy.
