Mojito Cocktails - a Pitcher of 8 - Florida Keys

 
Makes: a pitcher of 8 mojitos     Difficulty: Very Easy     Meal: Beverage     Great for potlucks!

From my RV kitchen

Mojitos are wonderful for a summer gathering under the RV awning. Use this recipe to make a pitcher of 8 cocktails.

Ingredients

1/3 c + 2T ultrafine sugar
96 spearmint leaves - organic if possible
8 limes - halved - organic if possible
8 oz (8 shots) of rum - high quality brand
32 oz club soda

How-to

In wide-mouth mojito pitcher add sugar. Add spearmint leaves to pitcher. Juice half of the limes (4 limes) - quarter the other half (4 limes). Add juice then lime quarters to pitcher. Muddle until quarters are juiced, mint is bruised and scent is divine. Stir, add rum, ice and club soda. Stir and garnish with a spring of spearmint or a lime wedge.
