505 Chile Factory Tour and Huevos Rancheros - Albuquerque, NM

Serves: 1 per recipe Difficulty: Very Easy Meal: Main Dish

Ingredients

Flour or corn tortilla
2 fresh eggs
1/4 c. shredded cheese
1 medium onion - chopped
1/3 sweet onion - chopped
2 leaves romaine lettuce - chopped

How-to

Sprinkle cheese on tortilla and melt in microwave for 30-ish seconds. Meantime, cook eggs as desired (I like them over medium). Place cooked eggs on top of cheesy, warm tortilla and top with tomato, onions and lettuce.

Garnish with sour cream, chile sauce (salsa or enchilada sauce works too) and Tucson's Greatest Guacamole. Enjoy!!
