From my RV kitchen
When in the vast and wonderful Adirondack Park you may hear folks refer to being inside the "blue line". When the park was first outlined on a map it was done so in blue ink - thus the blue line. There is an abundance of outdoor recreation throughout the park including biking, hiking, swimming, boating, touring historic locations, and more.
From Fort William Henry on beautiful Lake George to Fort Ticonderoga to Lake Placid to the Adirondack Museum to the awe-inspiring 46 High Peaks the Adirondacks offers something for every camper in the family.
Ingredients
Dressing:
1/3 c light mayonnaise
1/4 non-fat plain yogurt
3 T sugar (superfine works best)
1 T distilled white vinegar
Vegetables:
4 c broccoli florets - steamed 2 minutes
1 c chopped celery
1 c raisins
1/3 c roasted salted cashew pieces
1 1/2 c seedless grapes - halved (can be green, red or purple)
How-to
Dressing:
In small bowl whip all ingredients together until well mixed. Set aside.
Vegetables:
In large bowl mix all vegetables together.
Add dressing to vegetable mix and toss coating all ingredients.
Additional Tips
This dish is made in two steps - a dressing and the vegetables.
